Vegetarian Diets and Pro Athletes

Hey Craig, My favorite vegetarian dish is greek
spinach pie[spanikopita]. It's made with eggs, green
onions,feta cheese, fresh dill, spinach, butter and
pyllo dough. It's baked in the oven. It's to die for.

We have a lot of veggie meals, the idea is the same: we stew everything with onions or garlic, then you use something to make it thicker. With spinach you stew it with garlick, add milk, salt and white pepper, finally some sour cream and some natural oat flakes. You can have it as it is, or fold on top of brown rice (in that case leave out the oat flakes), top with 1-2 eggs, and put it into the oven for a while. I am an spinach addict, so I'll force myself to stop here...

Just so you know,an average dinner sized portion of "Spanikopita" is around 410 calories,24 grams of fat (12 of them saturated plus trans).NOT a "healthy" dish by any means,just b/c it has spinach.

Craig,
If you don't want any grains, try to put slices of potato/tomato/eggplant/onion/zukini in rows into a pan, partly covering each other. Crush a few cloves of garlic and some parsley into some olive oil, and put this oil on top of the vegetables. Goes straight into the oven, when it is soft, add some salt. 100% vegan, you'll like it!
